I don’t understand the QuickDraw action where you say the target drops to 0hp if the damage is high enough to get them there but that would be the case with any weapon wielded by anyone so I was just looking for clarification.

I.e, target has 10 health. Paladin uses Quickdraw, and rolls a 6 for damage. This reduces the target's health to 4. 4 is less than 6, so the target is reduced to 0 instead.
